Juicy red pesto dip

Ingredients
3 roasted red peppers (capsicum)
2 cloves garlic chopped finely
1/4 cup sundried tomatoes
1/4 cup tomato paste
1/4 cup basil leaves
1/4 cup virgin olive oil


Method
Puree all ingredients in a food processor and slowly pulse in the oil to form a smooth paste.  Season with salt and pepper, and if you like add a sprinkle of sugar to sweeten.  Makes about two cups.
