Ingredients
2 cups plain flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon mixed spice
2 eggs
1 cup oil (grapeseed)
1 1/4 cups sugar
1 teaspoon vanilla essence
2 large ripe bananas, mashed
1 cup crushed pineapple
Preparation
1. Preheat oven to 180 Celsius. Grease 2 muffin tins (24 muffins).
2. Mix together dry ingredients, except sugar.
3. In another bowl whisk together eggs, oil, sugar and vanilla. Add banana and pineapple.
4. Fold the wet mixture into the dry ingredients until just combined.
5. Put mixture into muffin tins and bake for 15 minutes until a skewer comes out clean.
6. Dust with icing sugar if desired.
